Eating healthy makes some people tremble and can bring on real depression because they can’t bear the thought of small amounts of tasteless food.

Sure, often times,  healthy eating choices eliminate sauces, cheeses, gravies, sugars and other tasty additions to food in order to cut down on calories. The problem is that too many times, we don’t want to make any changes to food because we love the way we fix it.

If you are interested in cutting calories and want to be successful, some changes have to be made. The only reason to sacrifice flavor is when we are too lazy to find lower calorie recipes and try new foods.

Here is a great recipe for a lower calorie  plate of cheesy fries & salsa:

Cooking spray
4 medium Russet/baking potatoes, peeled and cut into 1/2-inch thick fries
Salt and freshly ground black pepper
4 ounces shredded pepper jack cheese
1/4 cup prepared salsa

Preheat the oven to 400 degrees. Coat a large baking sheet with cooking spray.

Arrange the potatoes on the baking sheet, in a single layer, spray with cooking spray and season with salt and pepper. Bake 25 minutes, until golden brown. Top the potatoes with the cheese and bake for 3-5 more minutes, until the cheese is bubbly. Remove the potatoes from the oven –  top with salsa
